Stephanie Kung, Ph.D.
R&D Scientific Affairs Specialist
Dr. Stephanie Kung oversees Unicity’s extensive clinical research program. As an expert in the design, execution, and application of clinical studies and results, Dr. Kung contributes to the development of science-based products and programs at Unicity to improve overall well-being and health. She earned her BS in chemical biology (with a minor in nutrition) from the University of California, Berkeley and her doctorate in nutrition and food science from Utah State University with a research emphasis on polyphenols and intestinal health. Dr. Kung brings additional expertise in the areas of nutrient metabolism and bioactive compounds.
Dannie Li, Ph.D.
Botanical Scientist
Dr. Li is an experienced product development scientist. She has used her exceptional chemical engineering problem-solving skills to lead the development of many verified safe and evidence-based natural health ingredients. She has developed the extraction/purification process and methods for over 50 GRAS Status medicinal foods and botanicals. Before coming to Unicity, Dr. Li received her PhD in physical chemistry from the Institute of Chemistry, Chinese Academy of Sciences (ICCAS) in Beijing, China. She completed her postdoctoral work under Virginia Commonwealth University’s Dr. Mark McHugh, a global SuperCritical CO2 extraction technology innovator.
Sow Li Cheng, Ph.D.
Senior R&D Specialist
Dr. Sow Li Cheng received her bachelor’s degree and doctorate in food science and technology from the National University of Singapore. Her doctorate research and scientific publications focus on the interaction, structure, and physicochemical properties of hydrocolloids systems. She has worked many years in the food industry, researching and producing foods that come in various formats and health functions, including beverages, baked goods, and confectionery.

Unicity collaborates with a team of well-respected and world-renowned scientists, medical professionals, and experts known as the Unicity Scientific Advisory Board (USAB). The USAB advises and educates on Unicity products and the latest scientific developments related to nutrition.
Benjamin Bikman, Ph.D.
Director of Scientific Advisory Board
Dr. Benjamin Bikman earned his doctorate in bio-energetics and specialized in metabolic disorders as a postdoctoral fellow of the Duke-National University of Singapore. As a professor and scientist at Brigham Young University, Dr. Bikman’s focus is understanding chronic, modern-day diseases with an emphasis on the origins and consequences of metabolic disorders, including diabetes and obesity. He frequently publishes his research in peer-reviewed journals and presents at international science meetings.
Erin Glynn, Ph.D.
Scientific Advisory Board
Dr. Erin Glynn is an expert in human physiology, nutrition, and metabolism. Erin received her bachelor of science degree in exercise physiology from Texas A&M University, followed by her PhD in preventive medicine and community health from the University of Texas Medical Branch. Dr. Glynn completed a postdoctoral fellowship at the Duke University Medical Center, where she focused on the metabolic profiling of metabolic diseases, including obesity and diabetes. Since 2015, Dr. Glynn has focused her work on research and development of dietary supplements and targeted programs for metabolic health. She is an active member of the American Society for Nutrition and the host of the Nuchi Health Podcast, which discusses health, nutrition, and general wellness topics from a scientific perspective. Luc van Loon, Ph.D.
Scientific Advisory Board
Dr. van Loon has been a professor of nutrition and exercise at Maastricht University in the Netherlands since 2010. He has published well over 500 peer-reviewed articles, with his current focus being on the skeletal muscle adaptive response to physical activity and the impact of nutritional and pharmacological interventions to modulate metabolism in both health and disease. He is active in various media to translate research findings to the general public, highlighting the impact of nutrition and physical activity to support performance and health.
Paul Reynolds, Ph.D.
Scientific Advisory Board
Dr. Paul Reynolds earned a Ph.D. in molecular and developmental biology, with his post-doctoral work focusing on pulmonary inflammation. Currently a professor at Brigham Young University, Dr. Reynolds studies inflammation and glycation, specifically how exposure to particulates (personal air pollution) influences health. He frequently publishes scientific reports and presents at meetings on the topics of inflammation during hyperglycemia and how ketogenic states mitigate inflammatory outcomes.
